Never noticed this before, but when Brettonia (or any army) doesn't have a general and the game makes a random unit have the general inside of it, it's always infantry. Most of the time, this is fine.
However, with Brettonia, it doesn't make any sense if there are any knights available. I'd suggest making it so that the general in a brettonian army is always a knight unit if any type of knight is available.
