not only their aesthetic. I've read some rather horrific stuff about what the Assyrians did with some of their enemies. Of course not all of that has to be true, but it could've served as an inspiration.

I think it's interesting that Assyria was the first Bronze Age nation to have a professional standing army who could train and fight all year round. so I assume violence became an important part of their civilisation.

Aesthetic wise? I will have to swallow my dwarf pride and admit that dragon princes are my favourites. I don't like elves in general but their aesthetics are really beautiful.

Their whole religion of fiery bulls, human sacrifice and demon binding is clearly inspired by the Canaanites and other pagan nations detailed in the Old Testament, just notched up to eleven with fantasy effect. The Assyrian and Babylonian trappings are just meant to to cement that vibe, even though the cultures are quite different.
Tolkien's dwarves do have some thematic symbolism harkening to Jews particularly in the medieval period though. Nothing nasty of course, and the goofy depictions of Dawi Zhar from earlier editions are just par for the course for GW, nothing targeted unlike certain other short humanoid models.

That's part of it, but there are a lot of influences going into the Elves. For instance, the intricate politics, greataxe-wielding imperial bodyguards drawn from a location which is seen as politically impartial, and the general style of the High Elf army, pointy helmets, and scale armour are all Byzantine. (You won't find any period where Byzantine skutatoi look exactly like a High Elf spearman, but most of the individual pieces are there across different periods).
Games Workshop themselves have compared the Asur-Dawi contrast to Southern versus Northern England.
