I would settle for the map we have now with expanded Southlands, Lustria, Chaos Wastes, Bretonnia, Tilea, Estalia and added on Darklands and Mountains of Mourn. If you really wanted to tickle my fancy you'd add some potential for some more exotic stuff a bit further east though.
The thing is that WH3 is a stand alone map so the new map needs to have the same value as the vortex. Without the Far East, that won’t be possible.

I'm struggling to understand how they will set up the stand alone map. They can set it up like an ellipse if they want to Kislev and not have to include lots more of the Old World but if they go with the square it seems to me that we're going to see lots of the World's Edge Mountains, possibly some of the Border Princes and Badlands as well. If they do that there will be plenty of stuff with the Chaos Wastes (possibly parts of the Realm of Chaos as well), Norsca, Kislev, Darklands, Mountains of Mourn, Worlds Edge Mountains, Border Princes, Badlands and maybe even part of Sylvania. All this without having to add anything east of the Mountains of Mourn. And if they want to they can go into greater detail mode á la Season of Revelations or An Eye for an Eye.
I do not think there is any conclusive evidence for something east of the Mountains of Mourne by a long shot.

Absolutely. Even so, those who argue for anything definitive based off of nothing will never have a sound argument.

Core races:
Daemons - Because they are found in the Chaos Wastes. Chaos Dwarves - Because they encompass the Darklands. Ogres - Because they inhabit the Mountains of Mourn. Cathay - Because they are the main eastern empire.
Cathay serves many purposes. It requires a moderate initial investment, but has many pros. - Enough lore blurbs to devise a compelling roster. - Lore wise, it's the bastion against the chaos in the east, past relations with ogres and nehekhara. - Easy to do with the experience and assets of 3K. - Identifiable fantasy trope of eastern mythology. - Provides a good faction with a decent chunk of territory. - Serves as a bridge for new asian customers than come from 3K.
Ind -> Beastmen, Feral Lizardmen and Cathay clone.
Nippon -> Cathay clone and maybe Skaven or High elves.
Kislev -> Preorder
Possible DLC could include DoW, Hobgoblins or Nagash.

Of course, with all this development time, there is a small chance CA will throw a curveball and not follow the "rule" of 4 core races they've been following so far

I mean, I see why many people see this as a pipedream or something that will probably not happen. I would agree with all the skeptical ones in general. But in this case, both the rule of cool and the market point towards Cathay. I would be surprised if CA and GW don't capitalize on the opportunity to bring the 3K fans into the fold. And again, I would be surprised if we got less than a full map, as that would mean a smaller expansion than in the previous game.
I feel like there is a big opportunity to give us a grand expansion, a worthy finale, that also will make it much easier to sell the game to wider audiences.
Limiting ourselves to a strictly Case 1 map has the potential to backfire massively. It's possible that people won't understand why such a long wait doesn't translate to a bigger map, so that would hurt initial sales. To make things worse, such a small map would find it hard to add new factions, even if they are minor ones, which again will complicate the post-launch DLC schedule.
It's like we are so close to a perfect series, we just need a final push and investment to get it.

I agree completely, me hope remains that we end up with a full globe for Immortal Empires, even if it isn't in at launch, and that we got all the races in my signature by the end of game 3's life cycle, even if it means retroactively adding them at right at the end/even later, like Rome 2's later DLCs.

Full Eastern map. It would be completely stupid to do anything else. Warhammer 3 is the last game in the series - intentionally leaving it incomplete would be a huge slap in the face, to say nothing of the fact they'd be limiting what they could add to the game while compressing the hell out of the available space.
