I have the same problem siege defense battle crashes after 20-30 seconds.
I'm playing as Helman Ghorst's faction. A lord with full zombie stack army plus garrison attacked by Imrik's full army, tried 5 times every time crashed the same way even when I tried changing around my army a bit, reloaded an earlier save file etc.
I can still move around my camera game is not dropping me out or give me an error it just freezes.
Same problem from my site, it freezes after 4 seconds. Also, during this freeze GPU usage is like 99% In contrary to skirmish battle vs AI, it is working perfectly well.
Playing at ku gath this has happened to me when my minor settlement is attacked by some vampire counts. Game freezes and audio carries on playing. Can still move the camera around.
Possible workaround: I copied the save files out to the desktop, deleted the game and all files in appdata and steam. Reinstalled the game and started 1 campaign, saved it to have created folders automatically by the game.Put back my save files and tryed it.I played 4 defensive siege battles for now and no more freezing.Hope this solved it.And it could work for you too.
Another "workaround" is to revert back to v.2.0...
To do so, on windows; 1: With Steam running in the background type "steam://nav/console" into your browser. This will open the console in steam, allowing you to enter commands.
2: Enter this command "download_depot 1142710 1142711 3760397070497080852" (without the "" brackets) and press enter. This will download the 2.0 executable (and support files). It will not tell you how far it is, however you can check your network usage to see if it's still downloading or not. (CTRL-ALT-DEL -> Task-manager)
3: When done with step 2 the above, enter this command: "download_depot 1142710 1142712 4551955223934834567" This will download the main 2.0 data files. They are around 100GB in size, so will take quite a while.
4: When step 2 and 3 is done, backup your WH3 v. 2.1. files (copy to another location), and take the downloaded files from above and move & overwrite into the main WH3 folder. (you''ll probably find them in Steam\steamapps\content\app_1142710)
Backup any saves you have, that you're playing on (just in case).
Now, make sure to open WH3 using the executable and not steam - as steam will simply just update it to v.2.1. again... Keep doing so until the hotfix is released.
Just tested the battle I first uploaded in this thread (first post), and managed to fight and win it this time. Campaign seems to be progressing as before the 2.1 update also.

This worked for me as well, thank you for clear guide.
Same problem for me as well, helmgart defence siege freezes after 5-6 mins at the very same moment each time. I cant believe that they don't smoketest siege battles before releasing a build... wouldn't want to be in the Lead QA's position right now, that is difficult to explain such a miss...
same issue for me, game froze while defending in a siege as Katarin vs Festus. Game freezes for me the moment a 2nd gate is broken by the enemy. I can still move around the camera and hear sounds, but the units are frozen mid battle, and I cant issue orders, and the buttons dont work.. Auto resolve would lose the battle Tried two times, this is the only constant I found, 2nd gate breakes, game breaks,, for me at least.
Same time stop crash here, has happenned on offensive and defensive sieges, music stops can't click or interact with units or ai. Battle stops but can still move around camera. I think it is looping something as gpu usage sky rockets when the battle is stopped.
Same thing happened to me today with empire while defending a siege battle at fort sol. Also happened yesterday while playing Ironbrow dwarfs and defending in a settlement battle.
I tested the same siege map I was feezing on before and it didn't happen this time. I wasn't using the same armies tho (same factions not army compositions to be clear)
5900x @ stock , 4x8gb 3600mhz 14-16-16-36
ASUS TUF 3080 12 GB
4TB Sabrent NVMe SSD PCIe 4.0 w/ Windows 10 Pro 64bit
I'd like to add this isn't just an immortal empires issue. It's doing it on the main campaign too. For me it's a hard crash at the same time frame roughly after my defensive points goes from the stock 1k to around 1400. Something definitely got borked with the last update.
It's funny, the platform, Microsoft, where we have paid the most for this game and content we are getting the worst service. Feels bad. How do you release a patch for everyone but us?
