I'm sorry to disappoint you, but modders can't change the shape of land. They can make it bigger like that video, and even add cities, but they are unable (at least for now) to create new lands like Nippon.

I'm also concerned they wont ever bother creating the lore if they're not going to make the races. Which means we wont even get to play in Khuresh/Ind with placeholders and expeditions.
